Roasted chicken with honey and mustard is one of those simple dishes that you can cook when you have guests. With a bit of old-fashioned mustard and honey, you’ll be able to add a very special touch to the dish. The meat is very tender and juicy and with an accompaniment of potatoes stewed in the juice itself, you will have a very complete dish.

You can use any piece of chicken or whole chicken, but you know that the juiciest part is the same and, for them, I have chosen the back chicken quarters.

  • 2 chicken hindquarters
  • 4 small potatoes
  • 2 tablespoons honey
  • 2 tablespoons old-fashioned mustard
  • Salt
  • black pepper

Roasted Chicken With Honey And Mustard: Recipe Preparation

1.- Clean the chicken from the remaining feathers well and put it on a tray suitable for the oven. Pepper the chicken and place the peeled potatoes cut into halves.

2.- In a bowl mix two tablespoons of honey, two tablespoons of mustard and a spoonful of Provencal grasses (the Provencal herbs are a mixture of rosemary, thyme, basil, oregano and marjoram). If you do not have this blend of herbs, use the ones you have or the ones you like the most.

3.- Distribute the half of the previous mixture over the chicken, covering the whole surface and the rest you add half a glass of water, mixes and pour the preparation on top of the potatoes and the chicken.

4.- Insert the tray in the oven at 185ยบ C, with top and bottom heat. Place it at mid height. In the picture, you can see that I have cooked it on the second of the five levels that the oven has. Remember that each oven has a temperature value despite what the indicator indicates, it has to be cooked slowly so that the color reaches the interior.

5.- Water with juice, occasionally, the potatoes and the chicken. You do not have to spin it or move it, just water the surface when you see it dry. If the broth carries a lot of the dressing, the tastes will be better distributed, do not worry about it!

6.- When you see the chicken very golden, it is time to turn off the oven and serve. I had a hard time cooking it an hour and a quarter. If you are not going to serve immediately, leave the tray in the oven off until the time of eating.
